The Company
The Brewery 2 Sorelle was born in 2011 in connection with the purchase of an ancient farmhouse of the early Nineteenth century located on the left bank of the river Belbo. Between 2012 and 2013, the building has undergone a careful restructuring process that has allowed to enhance the beauty hidden by the passing of time and neglect.
Within the stone farmhouse a brewhouse with three vats of 20 hL, a series of fermenting vats of 40 hL each and a modern bottling line have been installed. In the land adjacent to the brewery, in rotation with other crops, two-row barley is cultivated; after being malted, it is used to produce our beer.
Considering our link with the Langhe territory and the willingness to protect the environment, our brewery provides for the production of the necessary energy through a photovoltaic plant of 20 KWP placed on the roof of the Company house.
In addition to that, always with the goal in mind to uphold a green philosophy, the heat needed for mashing and boiling the wort, as well as the one needed for the heating of the building, are produced by a wood biomass boiler working with the chips obtained from the pruning of the vines and the cutting of the trees owned by the company.
Finally, a waste water purification was installed in order to make the wastewater of eligible production to discharge in surface waters.
2 Sisters
Federica Toso, was born in 1988, graduated in Gastronomic Sciences at the University of Pollenzo (CN) and in 2013 obtained a Master’s Degree in Food Science and Technology at the University of Turin. At the brewery, she takes care of the agricultural part of the company, as well as of the supply of the raw materials needed for the brewing process.
Elisa Toso was born in 1991 and graduated from High School of Communication. After a short graphic course she joined the company where she represents the artistic and creative mind. In the brewery, her activities range from the creation of product packaging to the contacts with the suppliers.
